This Greek sparkling natural wine is made from the ancient Thrapsathiri grape and grows in the high-altitude region of Schinokapsala, in Lasithi on Crete. The vineyards are located at an altitude of 900 to 1050 meters, making it one of the highest wine regions in the world.
Bottling takes place after fermentation, when the fermentation has stopped. The wine matures on its own lees for 4 to 6 months. No sulfites are added and the wine undergoes no filtration, which emphasizes its pure taste.
Nebula Pet Nat white has a lively taste with fine bubbles. Its golden-yellow color, with amber reflections, immediately catches the eye.
The taste is smooth and characterized by ripe fruit and herbs.
Furthermore, aromas of apricot jam, peach, orange blossom, and honey emerge, with a subtle hint of fresh dough.
The fresh acidity and sparkling minerality give this wine a pleasant finish, with a touch of pepper, some bitterness, and a little citrus. In the finale, the honey also returns.
This PetNat is a celebration in your glass and calls for something summery and flavorful. Think ceviche, grilled octopus, or sardines from the BBQ. Also delicious with fritto misto, salad with peach and feta, or simply with a few pieces of graviera and olives.
