Ampelourgein - Anthosmia - Dafni, Trapsathiri & Muscat of Spina
This white wine is a blend of the indigenous grape varieties Dafni, Thrapsathiri, and Muscat or Spina, which together create a unique and harmonious wine. The aromatic bouquet of this wine is created by the natural yeasts of mountain herbs such as thyme and sage. These wild yeasts initiate fermentation.
The Thrapsathiri grape gives the wine a rich body and an oily texture, giving it a long finish. Muscat or Spina adds concentrated acidity and floral notes, contributing to the wine's balance and freshness. Dafni, grown at an altitude of 1100 meters, gives the wine its unique botanical and mineral character, resulting in a refreshing and lingering finish.
The wine ferments in stainless steel tanks at low temperatures and is left to mature on the yeast cells for 4-7 months, which increases its complexity and finesse.
