Thalassinos - Mikros Taraxias - Little Troublemaker - Vidiano
Discover "Mikros Taraxias - Little Troublemaker," a wine made from the Vidiano grape, which derives its characteristic flavor from the 25-year-old vineyards in Venerato, at an altitude of 500 meters. The limestone and sandy soils of this region contribute to the unique flavor of this wine.
The grapes are harvested by hand early in the morning to avoid high temperatures, which are essential for quality and preserve the fresh primary fruit aromas and acidity. After vinification, wild fermentation follows, during which the wine remains unfined and unfiltered. Only a HACCP filter is used during bottling for safety reasons. The wine contains a low sulfite content (30 mg/lt), depending on the vintage.
After pressing, the juice remains in contact with the skins for four days (maceration), which extracts color, flavor, and tannins from the skins. Then, 60% of the free juice is separated into small stainless steel tanks and clay vats (amphoras) for fermentation, using dry ice for cooling and preventing oxidation. After 10 months of aging on the lees, the wine is hand-blended, bottled unfined and unfiltered, and then aged in bottle for another 10 months.
Production is limited to only 1500-2500 bottles per year, depending on the harvest.
Tasting notes: The wine has a beautiful golden yellow color and displays strong aromas of dried peach, apricot, and bergamot, followed by jasmine and hints of almond and basil. The palate is full and rich, with pleasant acidity and a light tannic sensation. A long finish completes the wine.
This wine pairs perfectly with light fish dishes, such as grilled sea bream or seafood pasta. It also pairs well with Cretan dishes, such as grilled vegetables, citrus salads, or grilled chicken. For a surprising pairing, try it with creamy cheeses like Brie or Feta, or even with grilled pork with herbs.
