Thalassinos - Mikros Taraxias - Little Troublemaker - Liatiko (light red wine)

Discover "Mikros Taraxias - Little Troublemaker Liatiko," a unique, light red wine made from the Liatiko grape, native to the Sitia Monokara Plateau in Crete. These grapes grow on exceptionally old vines, ranging from 90 to over 200 years old, at an altitude of between 700 and 800 meters.

The grapes are harvested by hand early in the morning to avoid the impact of high temperatures. After vinification, wild fermentation follows. Only a small amount of sulfites is added (40 mg/lt), and the grapes are gently pressed with a basket press to extract only 50-60% of the juice. Fermentation takes place in small stainless steel tanks and clay vats, using dry ice for cooling and preventing oxidation. After 9 months of aging on the lees, the wine is hand-blended and bottled unfined and unfiltered. The wine then matures in bottle for a further 10 months.

Production is limited to 1500-2500 bottles per year, depending on the harvest.

Tasting notes: The wine has a pomegranate color and displays intense aromas of caramel, sun-dried tomatoes, orange peel, and red fruit, with notes of white pepper and floral hints. On the palate, the wine is rich, with pleasant acidity, light tannins, and a long finish that beautifully complements the wine's complexity.

This wine pairs beautifully with dishes that enhance its complex aromas. Grilled meats, such as lamb chops, and rich beef stews complement it beautifully, as do dried meat dishes like Apaki. It also complements traditional Cretan dishes, such as moussaka, grilled vegetables, or dishes with sun-dried tomatoes. Thanks to its light tannins and refreshing acidity, it also pairs harmoniously with spicy cheeses like Manouri and Feta.
