Meet Luna Nata, a special blend of 90% Syrah, 5% Kotsifali, and 5% Liatiko from the Skalani, Archanes, and Sitia regions. The vineyards are located at altitudes ranging from 200 meters to 800 meters, with old vines ranging from 35 to 90 years old. The grapes are harvested by hand in the early morning to avoid high temperatures and thus preserve the best flavors.
Vinification process: The wine undergoes wild fermentation, remains unfined and unfiltered, with only a HACCP filter during bottling for safety reasons. The alcohol content is 13.5% vol., and the wine contains a low sulfite content (30 mg/lt), depending on the vintage.
The vinification process involves a 30-day maceration with 50% whole bunches of grapes. The wine is aged 30% in amphorae and 70% in stainless steel tanks for 20 months, enhancing its complexity and character.
Production: Only 1000-1500 bottles are produced per year, depending on the vintage.
Tasting notes: Luna Nata has aromas of red fruit, prunes, raisins, fresh olive paste, and various spices. The palate is more delicate than expected, with a full body, balanced acidity, and a long finish that perfectly complements the complex aromas.
Luna Nata pairs perfectly with roasted meats, such as lamb or grilled steak, as well as dishes with rich sauces or aged cheeses like Parmesan or Pecorino. It also pairs well with Mediterranean dishes like grilled pork with herbs or goat cheese. And a tip from us... pair the wine with a good olive oil (ours, of course).
