Karavitakis Vidiano Indigenous Yeast 2016
An exceptional white wine from Crete that showcases Vidiano at its most aromatic, fruity, and minerally. Nikos Karavitakis worked with this indigenous grape for years and, after countless experiments, created this unique cuvée: spontaneously fermented with indigenous yeasts, aged for 36 months on fine lees in stainless steel, followed by bottle aging. The result? A layered, ripe, yet surprisingly fresh white wine with character.
In the glass, a medium lemon yellow color. The bouquet is rich with notes of honeycomb, grapefruit, mandarin, white peach, pineapple, sourdough bread, flowers (chamomile, chrysanthemum), and a subtle petrol note. On the palate, it is full-bodied, with a silky, almost oily texture, medium-to-medium acidity, and a pronounced minerality.
Serve at 10–12°C to fully appreciate the interplay of citrus, saltiness and creaminess.
Ideal with: grilled sea bass, ceviche, lobster, lemon and fennel risotto, or mature cheeses such as comté or graviera.
