Amphora – Moscato Spinas
A deeply characterful wine made from 100% Muscat or Spina grapes, fermented and aged in traditional amphorae using age-old methods. The grapes come from the Archanes vineyards, where young to medium-aged vines (10–25 years) grow in sandy and calcareous soils that give the wine its characteristic tension and minerality.
The harvest is carried out entirely by hand, in a process that operates as much as possible without electricity—pure, honest viticulture. The wine undergoes 20 days of skin contact, after which it ferments and ages in amphora for 10 months, without any additions or subtractions.
Wild fermentation, unfiltered, unfined and only 30 mg/L sulphites — this is natural wine in its most authentic form.
The result is a golden, aromatic, and complex wine with a mild tannic structure. Expect aromas of orange blossom, dried herbs, peach peel, citrus zest, and a soft earthy note imparted by the amphora. The palate is rich, full-bodied, yet refreshing, with a long, spicy finish.

This amphora-fermented Muscat or Spina is a wonderful accompaniment to dishes with depth and spiciness, such as:
•Cretan mezze: kalitsounia with herbs, grilled halloumi, dakos
•Dishes with smoke and umami: grilled octopus, grilled eggplant, charcoal vegetables
•Spicy or aromatic cuisines: Moroccan tagine, Lebanese salads, curries with coconut and lemongrass
•Grilled fish: sea bream, red mullet, swordfish
•Matured cheeses: graviera, pecorino, semi-soft sheep's cheese
Serve slightly chilled to emphasise the freshness, or a little warmer to fully reveal the earthy, spicy depth.
