A playful, vibrant, natural sparkling wine made from 100% Kotsifali, sourced from the high-altitude vineyards of Archanes, at the foot of the mythical Mount Youchtas/Zeus. The old vines—over 50 years old—grow on sandy and chalky soils and are tended, harvested, and vinified entirely by hand, with minimal use of electricity. It doesn't get more authentic than this.

Made using the ancestral method, the wine ferments spontaneously and develops its natural fizz in the bottle. After 3 days of skin contact and 8 months of maturation on the lees, the Pet Nat is carefully disgorged. No added sulphites, unfined, unfiltered—pure, vibrant, and unpolished.

In the glass, DO NOT DISTURB presents itself as cloudy and playful, with a soft mousse and aromas of red fruit, wild herbs, a hint of citrus, and a salty undertone from its chalky terroir. The palate is energetic, dry, refreshing, and surprisingly gastronomic.

With only 1500 bottles, this Pet Nat is a true limited release.
