This thyme honey comes from a remote area in the province of Chania on Crete, far from civilization.
Fylladitakis is a family business that has been keeping bees and producing thyme honey on Crete for 50 years. Pavlos Fylladitakis is a second-generation beekeeper. He grew up surrounded by nature, among bees, and now heads the family business. His goal is to continue producing top-quality thyme honey using only traditional production methods.
Cretan honey is widely known for its purity and high nutritional value, thanks in part to the rich Cretan flora that supports a natural and organic environment. It is one of the few areas with extensive thyme and pine vegetation where no other intensive agriculture takes place.
Fylladitakis has his own production facility in Kakodiki, in the prefecture of Chania. He manages over 1,000 beehives spread across Crete in carefully selected areas where conditions are optimal. These locations are ideal for the bees to collect pure pollen and work undisturbed.
The characteristic taste and valuable nutrients of this thyme honey are due to the native flora of the island of Crete.
